Josie’s Table is a tribute to owner Daniel Darves-Bornoz’s mother, Josephine. Josée was an incredible chef herself and started teaching Daniel at a young age. Daniel's father, Yves, a skillful gardener, and Josée were always cooking with produce from his garden at their home in Hague, New York. It was truly because of Josée that both Daniel and his son, Peter, went into the culinary arts.
The restaurant is led by executive chef and son of Daniel, Peter Darves-Bornoz, a Culinary Institute of the Arts graduate. Peter was most recently named a Rising Star Chef by the Albany Chef’s Food & Wine Festival Board in 2024.
Josie’s Table features farm-to-table cuisine with a focus on local, organic, and seasonal ingredients. The bar specializes in a variety of natural and organic wines, house infusions, and cocktails with locally distilled spirits.
Darves-Bornoz worked with Lee Owens Designs, a boutique interior design studio servicing Albany and Saratoga, to create a fresh and inviting space for guests to enjoy.
